Overview

For many years I worked in a corporate office. Meal Prep is key in staying healthy and saving money. Monday I would bring in all my greens to make salads each day @ lunchtime.


The one main component of my daily lunch that I wasn't willing to compromise on was healthy dressing. Most dressings are loaded with sugars and unhealthy oils.😔

The goal was to keep it quick and simple so every time I saw a dressing recipe I tried to get the core components of it.

This is a base, so feel free to add flavors and seasonings to it.


This recipe is designed for 1 but its easy to scale as needed.

Ingredients

1/2 Tbsp Dijon Mustard

1/2 Tbsp Hummus

1 Tbsp Olive Oil

Cold water 

Directions

  1. Place Mustard, Hummus and Olive oil in a large bowl

  2. Mix thoroughly until it has a thick uniform texture. For Solo salads, a fork will do. For larger salads a whisk is ideal

  3. ‘Slowly’ drizzle water into the mixture while mixing it vigorously

  4. When you achieve your desired texture, stop adding water.
